Flat leaf parsley picked from the garden this morning showing yellow wintering but also some new bright green leaves too. It is easily confused with Coriander when looking at them but while flat leaf parsley enhances other ingredients coriander adds a distinct flavour. It belongs to the same family as, carrots and cumin. These leaves are from a plant that was grown from seed and while curly leaf parsley has at different times grown very well I wanted flat leaf for being aromatic and flavourful. The curly leaf makes a pretty garnish.

Hardy ever green perennial Golden Thyme grows in our garden as small mounds with pink flowers throughout summer which attract butterflies and bees. It grows in well drained soil in sun or shade. The leaves are small and grow in clusters on fine stems. The leaves have an earthy, minty, slightly sour flavour much like a mild lemon. It is used with poultry, vegetables and rice. Use one third as much dried thyme as fresh thyme when cooking. The dry and fresh thyme possess a nearly identical flavour profile.

There are over a hundred varieties of thyme. It has been associated with with courage since ancient times, as it was thought to bring strength and bravery. The Egyptians used it to for mummification processes and the ancient Greeks used to sprinkle thyme in their baths.

  1. Your post reminded me of that lovely bread roast that old Mrs Thomas used to make, with lots of parsley, onions and cheese… Do you remember the recipe?

    1. Yes strangely I made bread roast with the thyme and parsley from the post. Fried onion, grated cheese, a few eggs and a little milk . Baked and then served hot with gravy. 😋 Ah, so that recipe was from Mrs Thomas. I don’t use a recipe as such. I think I also put celery in this one.
